據調查,有八成國人一周至少吃一次泡麵,可是,關於泡麵的傳聞,像會致癌、會造成禿頭等,總是不斷地被提起。哪些是對?哪些是錯?且聽專家怎麼回答。

根據調查,一周內吃過泡麵的民眾高
86%,其中八成吃12次,尤以男性、藍領階級和學生族群的比例較高 。此外,調查也顯示不少在外租屋的學生,幾乎每天都會吃一碗泡麵,似乎泡麵成為不可或缺的飲食。                                              

實際上,泡麵多屬於
高鹽食品,若當正餐食用,所提供的營養素除了碳水化合物及偏高 的油脂,蛋白質也較少,而且,衛生署建議國人每天的鈉攝取量2400毫克,有些泡麵一碗可能就超過建議量;但即便如此,為了方便、迅速解決吃的問題,不少人還是會選擇泡麵,該怎麼在便利性及健康性上取得平衡?《大家健康》特別蒐集坊間各式關於泡麵的傳言、迷思,請耕莘醫院永和分院營養師陳奕翰、台北市立萬芳醫院家庭醫學科醫師陳柏臣及洪啟文答疑解惑。

迷思
1:吃泡麵會吃進一堆防腐劑?
正解:
NO
市售的泡麵在包裝上都標示不含防腐劑,可是卻能存放很久,耕莘醫院營養師陳奕翰解釋,這是因為廠商將新鮮的麵條以油炸方式做成麵塊,藉此去除麵條中的水分,讓麵條裡的水活性降至最低。如此一來,微生物在缺乏水分的環境下,自然無法生長繁殖、甚至使麵條腐壞,進而達到保存目的。所以,泡麵有放防腐劑的說法是錯誤的。


迷思
2:吃油炸泡麵會致癌 非油炸泡麵才安全?
正解:
NO!兩者都不會致癌。
目前泡麵的麵條分油炸、非油炸兩種製作方式。非油炸的做法是以烘乾方式處理;而油炸處理的麵條,為了抗油脂酸敗,在製作過程會增添抗氧化劑
BHA(維生素E)、防止食物酸化的安定劑BHT,但劑量都合乎國內衛生使用條件,食用時不必擔心。因此,兩者都不會產生致癌情況。

迷思
3:泡麵吃多會禿頭?
正解:
NO!主要是營養不足。
網路傳聞,泡麵含大量防腐劑,吸收後人體會無法分解,導致頭髮出現光禿現象。其實,這是錯誤觀念。陳奕翰說明,會有禿頭現象,主要是因為長期食用泡麵,造成頭髮生長的營養素不夠、缺乏蛋白質,以致影響毛髮生長。

他也補充,有些人煮泡麵時會加入雞蛋,可是,蛋還未煮熟即盛起來食用,這會在體內與促進頭髮生長的生物素結合、妨礙營養吸收。若長期吃泡麵,即使有加蛋,營養不足仍可能形成禿頭。


迷思
4:泡麵容器含食用蠟 常吃易致癌?
正解:
NO!醫學尚未證實。
台北市立萬芳醫院家庭醫學科醫師陳柏臣解釋,容器內的食用蠟是可食用的,會透過健全的腎臟與肝臟來代謝,從脂溶性分解成水溶性物質,並排出人體。他也舉例說明,有些市售水果會噴些食用蠟,讓水果看起來更有光澤、有賣相。

如果人吃了含有食用蠟的食物,以一杯杯麵的劑量為例,藉由人體的腎臟及肝臟排除的時間約
3天(72小時)。不過,若攝取的食用蠟劑量過多,累積於體內或長期無法排除,就可能引起疾病。然而,對於它會致癌的傳言,目前尚未有臨床醫學報告可證實。
若實在不想吃進食用蠟,由於食用蠟在超過
60度的溫度下會逐漸溶解,最好避免吃碗裝泡麵,煮袋裝泡麵時,也避免用紙杯、紙碗裝熱湯。

迷思
5:烹煮時先加 調味包會致癌?
正解:
NO!無論先加或後加,都不會產生致癌物。
坊間流傳,煮泡麵時,調味包要最後才加,否則調味包裡的味精加熱到攝氏
100度、或煮超過10分鐘會變成致癌物。陳奕翰澄清,「加調味包的先後順序不會產生致癌物」,而且,味精轉換成致癌物「焦麩胺酸」,通常需加熱至攝氏200度以上、或煮超過1個小時以上,才有可能產生這種情況。

迷思
6:用熱水泡泡麵 氯氣恐殘留湯中?
正解:
YES
為達到均衡飲食,陳奕翰表示,有些民眾會在烹調泡麵時,放些蔬菜、雞蛋或肉片,為了確保食物煮熟,他建議用瓦斯爐烹煮。而且,用熱水泡泡麵,會產生氯氣,甚至可能殘留於湯中。若使用瓦斯爐烹煮,氯氣會隨著烹煮的過程揮發於空氣中。


迷思
7:慢性病患吃碗裝泡麵 血壓、肝腎負擔大?
正解:
YES
陳柏臣指出,健全的肝、腎至少得花
3天時間代謝碗裝泡麵裡的食用蠟,可是,肝臟病患或腎臟病患,因身體機能無法代謝,食用蠟的確易累積在體內,甚至引發其他疾病。再者,泡麵缺乏均衡營養素,患者應控制食用量,避免加重血壓或肝腎負擔。

迷思
8:泡麵先燙再煮 卡健康?
正解:
YES
將第
1次煮麵體的水倒掉,用第2次加入的水煮泡麵的確較健康。因為倒掉第1次煮泡麵的水,同時也去除麵條添加的抗氧化劑、安定劑,減輕人體吸收的負擔。
吃泡麵加點蔬菜、肉
營養更均衡
研究證實,泡麵的調理包經高
溫滅菌、真空包裝,肉類所含的維生素B、鐵質;或蔬菜裡的維生素CA,早已蕩然無存。台北市立萬芳醫院家庭醫學科醫師洪啟文表示,選購時,要注意包裝的成分、熱量、鹽分等標示,且不要長期高鹽、 脂飲食,以免破壞身體機能,造成糖尿病、 高血壓。
